I love comfort food and I think one of my favorite comfort food dishes is chicken and dumplings! The dumplings are the best part! I could honestly leave out everything else and just have dumplings in broth. But, then it wouldn’t be called chicken and dumplings, would it?
I received an instant pot last year for Christmas and have only used it once. I am in an instant pot group on Facebook so I can find some good recipes. Everyone talks about how much they love their instant pot, but I just couldn’t seem to find anything I wanted to cook in mine. While stalking Pinterest, I finally came across this recipe for Instant Pot Chicken and Dumplings and I thought I would try it.
Well, I LOVED it! I’m so glad I came across it because it is super easy and super quick to make. And it’s delicious!!
To make this you will need, chicken broth (I use the kind with less sodium), water, olive oil, chicken breast, cubed, refrigerated biscuits, carrots, peas, oregano, onion powder, basil, garlic, salt and pepper. (I left out the salt).
First you will flatten the biscuits and cut them into 1/2″ strips.
Put oil, chicken, oregano, onion powder, basil, garlic, salt and pepper into the instant pot and mix to coat.
Saute chicken until sides are browned.
Turn off instant pot and add chicken broth, water, carrots, and peas and mix well.
Stir in the biscuits.
Close and seal instant pot, cook on manual for five minutes. That’s it!

For a delicious side dish I fixed Cheesy Roasted Cauliflower. It was also the first time I have ever made this and it was super easy and quick. And quite yummy!

I love the instant pot! Have you ever tried hard boiling eggs in it? It peels SO easily! I love chicken and dumplings, we should definitely make this! Thank you for this wonderful post.

I really like the cheesy roasted cauliflower idea! That looks very diet-friendly and you get a good serving of vegetables to boot!

Yum! I would add some jalapeños and a little hot sauce to mine. You’d be surprised what I don’t put hot sauce on lol!
