Quick Chicken Fajitas

Happy Friday! We made it though the week! Way to go!

Thursday morning when I got up at 7am it was almost 60 degrees outside. By that afternoon the temperature had dropped into the 30’s! What is going on with this crazy weather?

Anyway, let me share you with one of my favorite recipes – Quick Chicken Fajitas. I use my Rockcrok Everyday Pan from Pampered Chef for this because that’s where I got the recipe. I’m in no way telling you that you need to have this pan because it is expensive!! I got it way cheaper than what it is priced at now. However, I will tell you that I absolutely love that pan! You can put it in the oven, the microwave, the refrigerator, the freezer, and even use it on the grill! It is amazing. So if you know someone who sells Pampered Chef, have yourself a party and earn that pan!

For this recipe you will need:

3 medium bell peppers – green, yellow, and red
1 medium onion
2 garlic cloves
1 lb. boneless, skinless chicken breasts
2 tablespoons taco seasoning
1 lime
Flour tortillas
4 oz. mild (or sharp) cheddar cheese
Optional toppings: sour cream, salsa, guacamole

Here’s what you do:

1.Slice the bell peppers and onions into strips.
2.Using a garlic press, press the garlic on top of the vegetables. (Sometimes I substitute fresh garlic for garlic powder if I’m running behind.)
3.Juice the lime into a medium bowl and add the taco seasoning; mix well. Add the chicken to the mixture and turn to coat. Place the seasoned chicken over the vegetables in the pan.
4.Microwave, covered, on high for 12-15 minutes or until chicken temperature reaches 165 degrees and the juices run clear.
5.Transfer the chicken to a cutting mat and slice it into thin strips. Return the chicken to the pan and combine it with the vegetables.
6.Wrap the tortillas with a damp paper towel and microwave them on high for 30 seconds, or until warm. To serve, spoon the chicken and vegetable mixture onto the centers of the tortillas. Top with cheese and optional toppings.

Now you see why it’s one of my favorite recipes? It’s quick and so yummy!! To save time, I cut the vegetables before hand and keep them in the refrigerator. You can also go ahead and coat your chicken in the lime juice and taco seasoning mixture and let it marinate in the refrigerator for a few hours.

What is your go-to recipe when you don’t have a lot of time to cook?
